Thai-Inspired Peanut Butter Noodles

Today, I’m excited to share a unique twist on a classic peanut butter noodle dish. This recipe was inspired by my recent travels to Thailand, where I fell in love with the bold flavors of Thai cuisine. The combination of creamy peanut butter, spicy chili, and tangy lime creates a dish that is sure to awaken your taste buds. Let’s get started!

Ingredients:

  • egg noodles (200g)
  • peanut butter (150g)
  • coconut milk (200ml)
  • soy sauce (50ml)
  • lime (1, juiced)
  • garlic (2 cloves, minced)
  • ginger (1″ piece, grated)
  • red chili (1, sliced)
  • sesame oil (1 tbsp)
  • scallions (for garnish)

Kitchen Tools:

  • saucepan
  • mixing bowl
  • whisk
  • knife
  • grater

Start by boiling the egg noodles according to the package instructions. In a saucepan, combine the peanut butter, coconut milk, soy sauce, lime juice, minced garlic, grated ginger, and sliced red chili. Cook over medium heat, stirring constantly until the sauce is smooth and well combined.

Once the noodles are cooked, drain them and add them to the saucepan with the peanut butter sauce. Toss the noodles until they are well coated in the sauce. Drizzle with sesame oil for an extra nutty flavor.

Serve the Thai-inspired peanut butter noodles hot, garnished with sliced scallions for a fresh and vibrant touch.

The total weight of the cooked dish is approximately 600g, making around 4 servings. Each serving weighs about 150g and has an estimated calorie count of 350 calories.

One tip to make this dish even more delicious is to sprinkle crushed peanuts on top for added crunch and texture.
