I’m excited to share a new healthy dessert recipe with you today! As the weather starts to cool down, I find myself craving warm and comforting flavors. This spiced pumpkin chia pudding is the perfect treat for the fall season, with a unique twist that will surely surprise your taste buds.

Ingredients:

  • canned pumpkin puree (200g)
  • chia seeds (40g)
  • coconut milk (200ml)
  • maple syrup (30ml)
  • cinnamon (1 tsp)
  • nutmeg (1/2 tsp)
  • vanilla extract (1/2 tsp)
  • toasted coconut flakes (for garnish)

Kitchen Tools:

  • measuring spoons

I start by mixing the canned pumpkin puree, chia seeds, coconut milk, maple syrup, cinnamon, nutmeg, and vanilla extract in a bowl. I whisk everything together until well combined, making sure the chia seeds are evenly distributed throughout the mixture. The warm spices of cinnamon and nutmeg instantly fill the kitchen with a cozy aroma.

Once everything is well mixed, I cover the bowl and let the pudding chill in the refrigerator for at least two hours, allowing the chia seeds to plump up and thicken the pudding. The longer you let it sit, the thicker the pudding will become.

When ready to serve, I scoop the spiced pumpkin chia pudding into individual serving bowls and top each with a sprinkle of toasted coconut flakes for a crunchy texture contrast. The combination of creamy pumpkin, nutty chia seeds, and warm spices makes for a satisfying and guilt-free dessert.
