Today’s Special: Green Tea Matcha Pudding

As the weather warms up and spring turns to summer, I find myself craving light and refreshing desserts. That’s why today, I’m excited to share with you my recipe for Green Tea Matcha Pudding. This unique dessert is a perfect balance of sweetness and earthy notes, thanks to the addition of matcha powder.

Gather your ingredients:

  • almond milk (400ml)
  • vanilla extract (1 tsp)
  • maple syrup (100g)
  • agar agar powder (2 tsp)
  • matcha powder (2 tbsp)

Don’t forget your kitchen tools:

  • saucepan
  • whisk
  • measuring cup
  • ramekins

To start, heat the almond milk in a saucepan over medium heat. Add in the vanilla extract and maple syrup, stirring gently to combine. Once the mixture is warm, sprinkle in the agar agar powder and whisk continuously to prevent clumps from forming. Let the mixture simmer for a few minutes until the agar agar is fully dissolved.

Next, remove the saucepan from heat and quickly whisk in the matcha powder until smooth and well incorporated. Pour the pudding mixture into individual ramekins and allow them to cool at room temperature for 30 minutes. Then, transfer the ramekins to the refrigerator to set for at least 2 hours.

Once the matcha pudding has set, serve chilled and garnish with a sprinkle of additional matcha powder for a vibrant touch. The smooth and creamy texture of the pudding combined with the subtle bitterness of matcha creates a delightful dessert experience.

The approximate total weight of the cooked dish is 600g, with 4 servings. Each serving weighs around 150g and contains approximately 200 calories.

A unique tip for this recipe is to sprinkle some crushed roasted pistachios on top before serving for an added crunch and nutty flavor that complements the matcha perfectly.
