Spicy Thai Peanut Noodle Salad

Ingredients:

  • rice noodles (200g)
  • red bell pepper (1, sliced)
  • cucumber (1, julienned)
  • carrot (1, shredded)
  • green onions (2, sliced)
  • cilantro (a handful, chopped)
  • roasted peanuts (50g, chopped)
  • sesame seeds (1 tbsp)
  • lime (1, juiced)
  • soy sauce (2 tbsp)
  • sriracha (1 tbsp)
  • peanut butter (3 tbsp)
  • garlic (1 clove, minced)
  • ginger (1-inch piece, grated)

  • vegetable peeler
  • chef’s knife
  • cutting board

To start, cook the rice noodles according to package instructions. Drain and rinse them under cold water, then set aside. In a large mixing bowl, combine the red bell pepper, cucumber, carrot, green onions, cilantro, and peanuts.

In a small saucepan, combine the lime juice, soy sauce, sriracha, peanut butter, garlic, and ginger. Heat over low heat, stirring until the peanut butter is melted and the sauce is smooth. Pour the sauce over the vegetable mixture and toss to combine.

Add the cooked rice noodles to the bowl and toss everything together until well coated. Taste and adjust seasoning if needed. Sprinkle with sesame seeds before serving.
