  • Fresh cilantro, chopped (1/4 cup)
  • Lime, juiced (1)
  • Salt and pepper to taste

Next, add the curry powder to the rice and cook for a minute to toast the spices. Slowly begin adding the warm vegetable broth, one ladleful at a time, stirring continuously until the liquid is absorbed before adding more.

Once the rice is cooked al dente, stir in the diced mango and coconut milk. Cook for a few more minutes until the mango is heated through and the risotto has a creamy consistency. Season with salt and pepper to taste.

Finally, remove the risotto from the heat and stir in the fresh lime juice and chopped cilantro. Serve the mango curry risotto hot, garnished with additional cilantro leaves for a burst of freshness.
