Introducing Exotic Mushroom Risotto

As the weather starts to cool down and the leaves begin to change colors, I find myself craving warm, comforting dishes to cozy up with. Today, I wanted to share with you a unique and flavorful recipe for Exotic Mushroom Risotto that will not only satisfy your taste buds but also fill your home with the most inviting aroma.

Ingredients:

  • Arborio rice (300g)
  • Mixed exotic mushrooms (such as shiitake, oyster, and enoki) (200g)
  • Shallots (2, finely chopped)
  • Garlic cloves (2, minced)
  • Vegetable broth (1 liter)
  • White wine (150ml)
  • Parmesan cheese (50g, grated)
  • Butter (2 tablespoons)
  • Fresh thyme (1 tablespoon, chopped)
  • Salt and pepper (to taste)

Kitchen Tools:

  • chef’s knife
  • grater

To start, heat the vegetable broth in a saucepan and keep it warm on low heat. In another saucepan, melt the butter over medium heat and sauté the shallots until translucent. Add the minced garlic and Arborio rice to the pan, stirring constantly until the rice is toasted and fragrant.

Deglaze the pan with white wine, allowing it to evaporate before adding a ladle of warm vegetable broth to the rice. Stir continuously until the broth is absorbed, then add another ladle of broth. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Meanwhile, in a separate pan, sauté the mixed exotic mushrooms with fresh thyme until they are golden and tender. Season with salt and pepper to taste.

Once the risotto is cooked to perfection, stir in the grated Parmesan cheese and sautéed mushrooms, reserving a few for garnish. Adjust the seasoning if needed and serve the Exotic Mushroom Risotto hot, topped with the remaining mushrooms and a sprinkle of fresh thyme.

The approximate total weight of the cooked dish is 900g, with 4 servings at 225g each. Each serving is approximately 350 calories.

One clever tip for making this dish even more flavorful is to infuse the vegetable broth with dried porcini mushrooms for extra depth of umami flavor.
