Ingredients:

  • egg noodles (200g)
  • bell pepper, thinly sliced (1)
  • cucumber, julienned (1)
  • carrot, shredded (1)
  • red cabbage, thinly sliced (100g)
  • fresh cilantro, chopped (1/4 cup)
  • peanuts, chopped (1/4 cup)
  • lime wedges for serving

Kitchen Tools:

  • large mixing bowl
  • whisk
  • sharp knife

To start, cook the egg noodles according to the package instructions in a large pot. Once cooked, drain the noodles in a colander and rinse under cold water. In a large mixing bowl, combine the cooked noodles with the bell pepper, cucumber, carrot, red cabbage, and fresh cilantro.

In a separate small bowl, whisk together the following ingredients for the dressing:
