Hello foodies! Today, I’m excited to share with you my latest creation: a spicy mango chicken stir-fry. This dish is perfect for those days when you’re craving something sweet, spicy, and savory all at once. The juicy mangoes add a refreshing touch to this classic Asian-inspired dish, making it a delightful meal for any occasion.

Ingredients:

  • 350g chicken breast (diced)
  • 1 large mango (peeled and cubed)
  • 2 bell peppers (sliced)
  • 1 onion (sliced)
  • 3 cloves of garlic (minced)
  • 1-inch piece of ginger (grated)
  • 3 tbsp soy sauce
  • 2 tbsp sriracha
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 2 tbsp sesame oil
  • To taste

Kitchen Tools:

  • wok
  • chef’s knife
  • cutting board
  • measuring spoons
  • wooden spoon

To start, heat the wok over high heat and add a tablespoon of sesame oil. Once the oil is hot, add the diced chicken breast and stir-fry until browned and cooked through. Remove the chicken from the wok and set it aside.

In the same wok, add another tablespoon of sesame oil and toss in the sliced bell peppers, onion, minced garlic, and grated ginger. Stir-fry until the vegetables are tender-crisp.

Next, return the cooked chicken to the wok and add the cubed mango pieces. In a small bowl, mix together the soy sauce, sriracha, honey, rice vinegar, and cornstarch. Pour this sauce over the chicken and mango mixture, stirring well to coat everything.

Season with salt and pepper to taste, and allow the sauce to thicken slightly. Once everything is heated through and well combined, remove the wok from the heat.

Serving:

This spicy mango chicken stir-fry weighs approximately 1200g when cooked and serves 4 people. Each serving is about 300g and has an estimated calorie count of 350.

One clever tip for this dish is to add a sprinkle of fresh cilantro on top before serving. This herb adds a burst of freshness and complements the flavors of the stir-fry beautifully.
