Ingredients:

  • 1 ripe avocado (150g)
  • 1 cup fresh basil leaves (30g)
  • 1/4 cup pine nuts (35g)
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 200g spaghetti

To start, cook the spaghetti according to the package instructions in a pot of salted boiling water until al dente. While the pasta is cooking, make the avocado pesto. In a food processor, combine the ripe avocado, fresh basil leaves, pine nuts, garlic cloves, lemon juice, olive oil, salt, and black pepper. Blend until smooth and creamy, scraping down the sides of the processor as needed.

Once the spaghetti is cooked, drain it and return it to the pot. Add the creamy avocado pesto to the pasta and toss until well coated. The warm pasta will help to smooth out the avocado pesto and create a luxurious sauce that clings to each strand of spaghetti.
