Irresistible Twist: Eggplant Parmesan Pockets You Need to Try

Today’s Recipe: Eggplant Parmesan Pockets

As the weather gets cooler, I find myself craving cozy comfort foods that are warm and satisfying. One of my favorite dishes to make during this time of year is my unique take on classic Eggplant Parmesan. Instead of the traditional layered casserole, I like to create individual “pockets” filled with all the delicious flavors of this Italian favorite.

To start, you’ll need the following ingredients:

    <li data-ingredient="1 large eggplant (approx. 500g), sliced into rounds

    <li data-ingredient="1 cup breadcrumbs (approx. 120g)

    <li data-ingredient="1 cup marinara sauce (approx. 240g)

    <li data-ingredient="1/2 cup shredded mozzarella cheese (approx. 60g)

    <li data-ingredient="1/4 cup grated Parmesan cheese (approx. 30g)

    <li data-ingredient="1/4 cup fresh basil leaves, chopped (approx. 10g)

    <li data-ingredient="Salt and pepper, to taste

    <li data-ingredient="Olive oil, for frying

You’ll also need the following kitchen tools:

  • knife
  • cutting board
  • skillet
  • baking sheet

Start by seasoning the eggplant slices with salt and pepper, then coat them in breadcrumbs. In a skillet over medium heat, fry the breaded eggplant slices in olive oil until golden brown and crispy on both sides. Remove from heat and set aside.

Next, preheat your oven to 350°F (180°C). On a baking sheet, place half of the fried eggplant slices. Top each slice with marinara sauce, mozzarella cheese, Parmesan cheese, and chopped basil. Place the remaining eggplant slices on top to create little “pockets.”

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly. Serve hot and enjoy the gooey, cheesy goodness of these Eggplant Parmesan Pockets.

The total weight of the cooked dish is approximately 800g, with 4 servings. Each serving weighs around 200g, with an estimated calorie count of 300 per serving.

One unusual tip for this recipe is to sprinkle a little extra Parmesan cheese on top of the pockets before serving. This adds an extra layer of flavor and a crispy finish to the dish.
