Cozy Sweet Potato Dragon Fruit Stew

Ingredients:

  • purple sweet potatoes (400g)
  • dragon fruit (1 large)
  • coconut milk (200ml)
  • lemongrass stalk (1)
  • turmeric powder (1 tsp)
  • spring onions (3 stalks)
  • cashews (50g)
  • mint leaves (a handful)
  • lime (1)

Preparation:

I begin by peeling and cutting the purple sweet potatoes into cubes, then placing them in a saucepan with water to boil until tender. While the sweet potatoes cook, I slice the dragon fruit in half and scoop out the flesh, setting it aside. In a separate saucepan, I combine the coconut milk, lemongrass, and turmeric powder over low heat to infuse the flavors.

Once the purple sweet potatoes are soft, I drain them and transfer them to a serving bowl. I add the dragon fruit, cashews, and thinly sliced spring onions on top. I then pour the infused coconut milk over the ingredients and garnish with torn mint leaves and a squeeze of lime juice.
