Today’s Culinary Adventure: Tofu and Pineapple Stir-Fry

As the weather warms up, I find myself craving lighter and more refreshing meals. Today, I’m excited to share with you my latest creation: a tantalizing tofu and pineapple stir-fry that is bursting with flavors and textures. This dish is perfect for a quick weekday dinner or a fun weekend lunch, and it’s guaranteed to impress your taste buds!

Ingredients:

  • 250g firm tofu, cubed
  • 1 cup of pineapple chunks
  • 1 red bell pepper, sliced
  • 1 cup of snow peas
  • 1 tablespoon of minced ginger
  • 2 cloves of garlic, minced
  • 3 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of cornstarch
  • 1/2 cup of vegetable broth
  • Cooked rice for serving

I start by heating up my wok over medium-high heat and adding the sesame oil. Once the oil is hot, I toss in the cubed tofu and cook until it is golden and crispy on all sides. Next, I add in the minced garlic and ginger, stirring constantly to avoid burning.

In a small bowl, I whisk together the soy sauce, rice vinegar, cornstarch, and vegetable broth. I pour this mixture into the wok with the tofu, along with the pineapple, red bell pepper, and snow peas. I stir everything together and let it simmer for a few minutes until the sauce thickens and the vegetables are tender-crisp.

To serve, I dish up the tofu and pineapple stir-fry over a bed of fluffy cooked rice. The combination of sweet pineapple, savory tofu, and crunchy vegetables is simply irresistible. Each bite is a delightful mix of flavors and textures that will keep you coming back for more.
