Ingredients:

  • ripe plantains (about 500g)
  • chorizo sausage (about 200g)
  • goat cheese (about 100g)
  • red onion (1 medium)
  • garlic cloves (2 cloves)
  • olive oil (2 tbsp)
  • salt and pepper to taste

To start, preheat your oven to 400°F (200°C). Peel the plantains and cut them in half lengthwise. Place them on a baking sheet and bake for about 20 minutes until they are slightly golden and tender.

While the plantains are baking, heat olive oil in a skillet over medium heat. Add chopped red onion and minced garlic, sautéing until softened. Crumble in the chorizo sausage and cook until browned and cooked through. Season with salt and pepper to taste.
