As the warm summer days approach, I find myself craving light, refreshing desserts that perfectly capture the essence of the season. That’s why I’m excited to share with you my latest creation: Lemon Basil Panna Cotta. This delicate and sophisticated dessert is a perfect marriage of tangy citrus flavors and aromatic basil, making it a delightful treat for any occasion.

To make this unique dessert, you’ll need the following ingredients:

  • 500ml heavy cream
  • 250ml milk
  • 150g sugar
  • 10g gelatin
  • Zest of 1 lemon
  • Handful of fresh basil leaves

To bring this recipe to life, you’ll need the following kitchen tools:

  • saucepan
  • whisk
  • fine mesh strainer
  • ramekins

Begin by pouring the heavy cream and milk into a saucepan over medium heat. Add in the sugar and stir until it is fully dissolved. Next, sprinkle the gelatin over the mixture and let it sit for a few minutes to bloom. Stir well to ensure the gelatin is completely dissolved.

Meanwhile, gently bruise the fresh basil leaves to release their oils and add them to the saucepan along with the lemon zest. Continue to heat the mixture for another 5 minutes, being careful not to let it boil. Remove the saucepan from the heat and strain the mixture through a fine mesh strainer to remove the basil leaves and lemon zest.

Divide the liquid evenly among the ramekins and allow them to cool to room temperature before transferring them to the refrigerator to set for at least 4 hours, or preferably overnight.

Once the Lemon Basil Panna Cotta has set, carefully run a knife around the edge of each ramekin and invert the panna cotta onto a serving plate. Garnish with a sprig of fresh basil or a twist of lemon zest for a beautiful finishing touch.

This recipe yields approximately 6 servings, with each serving weighing around 150g. One serving of this Lemon Basil Panna Cotta is estimated to have around 250 calories.

One clever tip for this recipe is to infuse the cream mixture with the basil and lemon zest overnight before straining it. This will enhance the flavors and give the panna cotta a more intense taste.
