Ingredients:

  • rice noodles (200g)
  • coconut milk (400ml)
  • red curry paste (2 tbsp)
  • chicken stock (500ml)
  • chicken breast, thinly sliced (300g)
  • red bell pepper, sliced (1)
  • onion, sliced (1)
  • garlic, minced (2 cloves)
  • fresh ginger, grated (1 inch)
  • lime, juiced (1)
  • cilantro, chopped (for garnish)
  • salt and pepper to taste

Kitchen Tools:

  • wooden spoon
  • knife
  • cutting board
  • grater

To start, cook the rice noodles according to the package instructions until al dente. In a large pot, heat some oil over medium heat and sauté the onion, garlic, and ginger until fragrant. Add the red curry paste and cook for another minute.

Pour in the coconut milk and chicken stock, stirring well to combine. Bring the mixture to a simmer, then add the sliced chicken breast and red bell pepper. Let the soup simmer for about 10 minutes, until the chicken is cooked through.

Once the chicken is cooked, add the cooked rice noodles to the pot. Stir in the lime juice and season with salt and pepper to taste. Allow the soup to simmer for another 5 minutes to let the flavors meld together.

Serve the Coconut Curry Noodle Soup hot, garnished with fresh cilantro. This dish weighs approximately 1200g in total, with 4 servings at 300g each. Each serving is around 400 calories.
