  • Shallot (1, finely chopped)
  • Garlic (2 cloves, minced)
  • Vegetable broth (1 liter)
  • Dry white wine (1/2 cup)
  • Parmesan cheese (50g, grated)
  • Fresh thyme (1 tablespoon, chopped)
  • Butter (2 tablespoons)
  • Olive oil (2 tablespoons)
  • Salt and pepper to taste

To start, in a large skillet, heat the olive oil over medium heat. Add the shallot and garlic, and sauté until fragrant. Next, add the mixed mushrooms and cook until they are soft and golden brown.

Continue this process until the rice is creamy and cooked to al dente. This should take about 20-25 minutes. Stir in the butter, Parmesan cheese, and fresh thyme. Season with salt and pepper to taste.
