Rainbow Vegetable Stir-Fry

As the weather gets warmer, I find myself craving fresh, colorful dishes that are quick and easy to make. Today, I’m excited to share my recipe for a rainbow vegetable stir-fry that is not only visually stunning but also incredibly delicious and nutritious.

For this vibrant stir-fry, you’ll need a mix of fresh, seasonal vegetables. I like to use a combination of bell peppers, carrots, snow peas, purple cabbage, and baby corn. The key to this dish is to keep the vegetables crisp and colorful, so try not to overcook them.

Ingredients:

  • 2 bell peppers, sliced
  • 2 carrots, julienned
  • 1 cup snow peas
  • 1/2 small purple cabbage, thinly sliced
  • 1 can baby corn, drained
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 1/4 cup water
  • Cooked rice, for serving
  • Sliced green onions, for garnish

Start by heating your wok over high heat and adding a splash of oil. Once hot, add the garlic and ginger, and stir-fry for about 30 seconds until fragrant. Add in the bell peppers, carrots, snow peas, purple cabbage, and baby corn. Cook for 3-4 minutes, stirring frequently, until the vegetables are just tender-crisp.

In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, cornstarch, and water. Pour this sauce over the vegetables in the wok and stir well to coat. Cook for another 1-2 minutes until the sauce has thickened slightly and everything is heated through.

Serve the rainbow vegetable stir-fry over cooked rice and garnish with sliced green onions. This dish is best enjoyed fresh and hot, so dig in right away!
