For this recipe, you will need the following ingredients:

  • 150g fresh blueberries
  • 1 medium cucumber, peeled and diced
  • 1/2 small red onion, diced
  • 1 large tomato, chopped
  • 1 small red bell pepper, seeded and chopped
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 500ml vegetable broth
  • Salt and pepper to taste

To start, combine the strawberries, blueberries, cucumber, red onion, tomato, red bell pepper, and garlic in a large mixing bowl.
