  • saucepan
  • wooden spoon
  • grater
  • ladle

Begin by heating the olive oil in a saucepan over medium heat. Add the shallot and garlic, sautéing until softened. Next, add the diced golden beets and arborio rice, toasting them slightly to enhance their flavors.

Pour in the white wine and allow it to simmer until absorbed. Begin adding the vegetable stock, one ladle at a time, stirring constantly until each ladleful is absorbed before adding the next. This process will take about 20-25 minutes, resulting in perfectly creamy risotto.

Once the risotto reaches a creamy consistency, stir in the fresh thyme, grated parmesan cheese, and butter. Season with salt and pepper to taste, adjusting the flavors as needed.

Serve the golden beet risotto warm, garnished with additional thyme leaves and a sprinkle of parmesan cheese. This dish weighs approximately 1200 grams in total, with 4 servings at 300 grams each. One serving of this flavorful risotto contains approximately 350 calories.
