Hey there, foodies! Today I’m excited to share my latest creation with you all — Spicy Coconut Curry Meatballs. This dish was inspired by my recent trip to Thailand, where I fell in love with the bold flavors of Thai cuisine. I wanted to recreate those flavors at home, and this recipe is the result. It’s the perfect comfort food for a cozy night in or a gathering with friends.

Ingredients:

  • ground beef (500g)
  • breadcrumbs (50g)
  • coconut milk (400ml)
  • red curry paste (2 tbsp)
  • onion (1, finely chopped)
  • garlic (3 cloves, minced)
  • ginger (1-inch piece, grated)
  • cilantro (a handful, chopped)
  • lime juice (1 tbsp)
  • salt and pepper to taste

Kitchen Tools:

  • mixing bowl
  • skillet
  • wooden spoon
  • baking sheet

To start, preheat your oven to 180°C. In a mixing bowl, combine the ground beef, breadcrumbs, half of the chopped onion, garlic, ginger, cilantro, salt, and pepper. Mix well and form the mixture into meatballs. Place the meatballs on a baking sheet and bake for 20 minutes until cooked through.

In a skillet, heat some oil and sauté the remaining onion until translucent. Add the red curry paste and cook for another minute. Pour in the coconut milk and bring it to a simmer. Add the cooked meatballs to the curry sauce and let it simmer for another 10 minutes to allow the flavors to meld together.

Finish off the dish by drizzling lime juice over the meatballs before serving. The tangy lime juice adds a refreshing twist to the rich and spicy curry sauce.

Serving:

This recipe yields approximately 20 meatballs, with a total weight of 1200g. Each serving consists of 4 meatballs, with an average weight of 60g per serving. One serving of these Spicy Coconut Curry Meatballs is about 300 calories.

One unique tip for this recipe is to serve the meatballs with steamed jasmine rice and a side of pickled vegetables. The acidity and crunch of the pickled vegetables perfectly complement the rich and spicy flavors of the meatballs.
