Today, I’m sharing a recipe for a dish that always reminds me of cozy autumn evenings spent with loved ones. The combination of sweet caramelized onions, juicy figs, and tender pork is a delightful mix of flavors that is perfect for any special occasion.

Ingredients:

  • pork tenderloin (500g)
  • red onions (200g)
  • fresh figs (150g)
  • balsamic vinegar (30ml)
  • brown sugar (15g)
  • fresh rosemary
  • salt and pepper

  • cast iron skillet
  • oven
  • meat thermometer

To start, preheat your oven to 375°F (190°C). Begin by slicing the red onions thinly and sautéing them in a hot cast iron skillet with a drizzle of olive oil until caramelized. Add in the fresh figs, balsamic vinegar, brown sugar, and chopped rosemary. Let the mixture simmer until the figs are soft and the flavors have melded together.

While the onions and figs are caramelizing, butterfly the pork tenderloin by slicing it lengthwise and opening it like a book. Season the inside with salt and pepper. Once the onion and fig mixture is ready, spread it evenly over the opened pork tenderloin, then carefully roll it back up and secure it with kitchen twine.

Place the stuffed pork tenderloin in the same cast iron skillet used for the onions and figs, sear it on all sides until golden brown. Transfer the skillet to the preheated oven and roast the pork for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C) when tested with a meat thermometer.

Once cooked, remove the pork from the oven and let it rest for a few minutes before slicing into thick rounds. Serve the caramelized onion and fig stuffed pork tenderloin with a side of roasted vegetables or a fresh green salad for a complete and satisfying meal.

Tip:

To add an extra layer of flavor, try incorporating a handful of crumbled blue cheese into the onion and fig mixture before stuffing the pork tenderloin. The tangy cheese pairs perfectly with the sweet figs and savory pork.
