Inspired by the vibrant colors and tropical flavors of summer, I decided to create a dish that combines the savory elements of sushi with the sweetness of mango. These Exotic Mango Sushi Rolls are perfect for a fun and festive gathering with friends or family, or simply when you’re in the mood for something different and delicious.

Ingredients:

  • 250g sushi rice
  • 4 nori sheets
  • 1 ripe mango, thinly sliced
  • 1 small cucumber, julienned
  • 1 ripe avocado, sliced
  • 2 tbsp black sesame seeds
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt

Kitchen Tools:

  • bamboo sushi mat
  • sharp knife
  • rice paddle

To start, rinse the sushi rice in a colander until the water runs clear. Cook the rice in a rice cooker according to the manufacturer’s instructions. In a small saucepan, combine the rice vinegar, sugar, and salt, and heat until the sugar and salt dissolve. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture to season the rice. Let it cool to room temperature.

Place a nori sheet shiny side down on the bamboo sushi mat. Spread a thin layer of sushi rice evenly over the nori, leaving a 1-inch border at the top. Arrange slices of mango, cucumber, and avocado along the center of the rice. Sprinkle black sesame seeds over the fillings.

Using the bamboo mat, roll the sushi tightly from the bottom, using gentle pressure to shape the roll. Wet the top border of the nori sheet with water to seal the roll. Repeat with the remaining nori sheets and fillings.

Using a sharp knife, cut each roll into 6-8 pieces. Arrange the sushi rolls on a platter and serve with soy sauce, pickled ginger, and wasabi on the side. Enjoy the burst of flavors in every bite!
