For this recipe, you’ll need the following ingredients:

  • 1 ripe mango, diced
  • 400ml coconut milk
  • 500g chicken breast, sliced
  • 1 red bell pepper, sliced
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 red chili, sliced
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp oil
  • Fresh cilantro for garnish

To prepare this dish, start by heating oil in a large saucepan over medium heat. Add the minced garlic, grated ginger, and sliced chili, and sauté until fragrant. Next, add the diced onion and sliced chicken breast, cooking until the chicken is browned on all sides.

Once the chicken is cooked, add the sliced bell pepper, diced mango, curry powder, turmeric, salt, and pepper to the saucepan. Stir well to combine all the ingredients. Pour in the coconut milk and bring the curry to a simmer. Let it cook for 15-20 minutes until the sauce has thickened slightly.
