Ingredients

  • 350g lamb shoulder, diced
  • 100g dried apricots, chopped
  • 200g couscous
  • 1 large zucchini, sliced
  • 2 tbsp harissa paste
  • 1 preserved lemon, diced
  • 50g almonds, toasted
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 3 tbsp olive oil
  • 500ml chicken stock

Preparation

I start by seasoning the lamb with cumin and coriander before browning it in a large skillet with olive oil. Once the lamb is golden brown, I add in the harissa paste, dried apricots, and preserved lemon to infuse the meat with rich, spicy flavors.

In a separate saucepan, I bring the chicken stock to a boil and stir in the couscous. Once the couscous has absorbed the liquid, I fluff it with a fork and set it aside.

Next, I sauté the sliced zucchini in the skillet with the lamb until tender. Finally, I combine the zucchini, lamb mixture, and toasted almonds with the fluffed couscous, ensuring all the ingredients are well mixed.

Tips

For a creative touch, you can sprinkle the finished dish with a pinch of ground cinnamon and a drizzle of honey for a hint of sweetness.

Serving

The total weight of the cooked dish is approximately 1200g, with enough servings for 4 people. Each serving weighs about 300g and has an estimated calorie count of 400.
