To start, preheat your oven to 180°C. Slice the cherry tomatoes in half, dice the zucchini and red onion, and roughly chop the kalamata olives and fresh basil. In a bowl, whisk together the eggs with a pinch of salt and pepper.

Heat olive oil in an oven-proof skillet over medium heat. Add the diced red onion and zucchini, cooking until softened. Then, add in the cherry tomatoes and kalamata olives, cooking for another few minutes until everything is heated through.

Pour the whisked eggs into the skillet, making sure they cover all the vegetables evenly. Crumble feta cheese on top and sprinkle with fresh basil. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set and the top is slightly golden.
