Today, I’m excited to share my recipe for Mexican-inspired stuffed bell peppers. This dish is a perfect blend of vibrant colors, bold flavors, and hearty ingredients that will surely lift your spirits.

For this recipe, you will need the following ingredients:

  • 4 large bell peppers, halved and seeds removed
  • 400g ground turkey
  • 1 can (400g) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

You will also need the following kitchen tools:

  • baking sheet
  • skillet
  • mixing bowl
  • knife
  • spatula

To start, preheat your oven to 375°F (190°C) and place the bell peppers, cut side up, on a baking sheet. In a skillet, cook the ground turkey over medium heat until browned. Add the diced onion, minced garlic, chili powder, cumin, salt, and pepper, and cook until the onion is softened.

Next, mix in the black beans and corn kernels, stirring until everything is well combined. Fill each bell pepper half with the turkey mixture, packing it in tightly. Top each pepper with shredded cheddar cheese.

Bake the stuffed bell peppers in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly. Serve hot and enjoy the delicious flavors of this Mexican-inspired dish.
