This recipe was inspired by a recent trip to the seaside where I indulged in the freshest lobster and the most vibrant saffron. The combination of these two ingredients is truly magical and creates a dish that is both comforting and elegant at the same time.

To create this masterpiece, you will need the following ingredients:

  • cooked lobster meat (300g)
  • arborio rice (200g)
  • 1 onion
  • 2 garlic cloves
  • white wine (150ml)
  • vegetable broth (750ml)
  • pinch of saffron threads
  • 50g butter
  • 50g Parmesan cheese
  • fresh parsley (for garnish)

For this recipe, you will need the following kitchen tools:

  • saucepan
  • wooden spoon
  • chef’s knife
  • cutting board

To begin, finely chop the onion and garlic cloves. In a saucepan, melt half the butter over medium heat and sauté the onion and garlic until translucent. Add the arborio rice and toast it for a couple of minutes until it becomes slightly translucent. Deglaze the pan with the white wine and cook until almost completely absorbed.

Meanwhile, heat the vegetable broth in a separate saucepan. Take a ladleful of the hot broth and pour it over the saffron threads in a small bowl to infuse the flavor.

Begin adding the hot broth to the rice mixture, one ladleful at a time, stirring continuously until absorbed before adding more. Continue this process until the rice is cooked al dente, which should take about 18–20 minutes. Keep the risotto creamy by not letting it dry out completely.

Once the risotto is cooked, stir in the remaining butter, grated Parmesan cheese, and the saffron-infused broth. Gently fold in the cooked lobster meat, making sure not to break it up too much. Season with salt and pepper to taste.

To serve, ladle the creamy risotto into bowls and garnish with fresh parsley. The vibrant colors of the saffron and the tender lobster meat will surely impress your guests.
