Decadent Desserts: Lavender Blackberry Cheesecake

Today, I’m excited to share with you a recipe for a unique and indulgent dessert that combines the floral notes of lavender with the tart sweetness of blackberries. This Lavender Blackberry Cheesecake is perfect for a special occasion or simply as a treat to indulge in after a long day.

Ingredients:

  • 400g cream cheese
  • 150g sugar
  • 3 eggs
  • 200ml heavy cream
  • 1 tsp vanilla extract
  • 1 tbsp dried lavender
  • 150g blackberries
  • 50g butter, melted
  • 200g digestive biscuits

Kitchen Tools:

Start by preheating your oven to 325°F (160°C). In a food processor, crush the digestive biscuits until they resemble fine crumbs. Mix in the melted butter until the crumbs are well coated. Press this mixture into the bottom of a springform pan to form the crust.

In a saucepan, heat the heavy cream and dried lavender over low heat until warm. Let it steep for 10 minutes, then strain out the lavender and set the infused cream aside.

In a mixing bowl, beat the cream cheese and sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and the infused cream.

Pour the cheesecake batter over the prepared crust. Drop blackberries on top of the batter and swirl gently with a knife to create a marbled effect.

Bake the cheesecake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Allow the cheesecake to cool to room temperature before chilling in the refrigerator for at least 4 hours, or overnight for best results.

Once chilled, remove the cheesecake from the springform pan and slice into portions. Enjoy the creamy richness of the cheesecake with the burst of flavor from the blackberries and the subtle hint of lavender.
