  • purple potatoes (200g)
  • quince (150g)
  • chestnuts (100g)
  • turmeric (1 tsp)
  • cinnamon (1 tsp)
  • nutmeg (1/2 tsp)
  • maple syrup (2 tbsp)
  • olive oil (3 tbsp)
  • salt and pepper (to taste)

Start by preheating your oven to 400°F (200°C) and lining a baking sheet with parchment paper. In a mixing bowl, combine the diced butternut squash, thinly sliced purple potatoes, cubed quince, and chopped chestnuts. Drizzle with olive oil, maple syrup, turmeric, cinnamon, nutmeg, salt, and pepper. Toss everything together until well coated.

Spread the mixture out evenly on the prepared baking sheet and roast in the oven for about 30-35 minutes, or until the vegetables are tender and slightly caramelized. Make sure to give them a stir halfway through cooking to ensure even browning.
