Ingredients

  • penne pasta (250g)
  • mango, diced (1 large)
  • coconut milk (200ml)
  • curry powder (1 tbsp)
  • shallot, minced (1 medium)
  • garlic, minced (2 cloves)
  • lime juice (1 lime)
  • fresh cilantro, chopped (2 tbsp)
  • salt and pepper to taste

### Preparation:
Start by boiling the penne pasta in salted water according to package instructions. While the pasta is cooking, heat a pan over medium heat and sauté the shallot and garlic until softened. Add the mango cubes and cook until slightly caramelized.

Next, pour in the coconut milk and curry powder, stirring to combine. Let the sauce simmer for a few minutes until it thickens slightly. Season with salt and pepper to taste. Squeeze in the lime juice for a refreshing kick.

Once the pasta is cooked, drain it and add it to the pan with the mango coconut sauce. Toss everything together to coat the pasta evenly. Sprinkle fresh cilantro on top for a burst of freshness and color.

Tips
