  • 400ml coconut milk
  • 2 Thai chili peppers, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup Jasmine rice (200g), rinsed
  • 250ml vegetable broth
  • Handful of fresh cilantro, chopped
  • 1 lime, juiced
