To start, preheat your Dutch oven over medium heat. Season the lamb shanks with salt and pepper, then sear them in the hot pot until golden brown on all sides. Remove the shanks and set them aside.

In the same pot, sauté the chopped onion until translucent. Add in the minced garlic, grated ginger, cumin, coriander, cinnamon, and turmeric, stirring until fragrant. Pour in the canned tomatoes and beef broth, then return the lamb shanks to the pot. Bring the stew to a simmer, then cover and let it cook on low heat for 2-3 hours until the meat is tender and falling off the bone.

Once the lamb is cooked through, stir in the honey and adjust the seasoning with salt and pepper to taste. Serve the stew hot, garnished with fresh coriander for a pop of color and freshness.
