Today, I’m excited to share a vibrant and refreshing recipe inspired by the colorful and lively works of abstract expressionist artists. This Citrus Burst Salad is a delightful blend of flavors and textures that will awaken your taste buds and brighten your day.

Ingredients:

  • mixed greens (arugula, spinach, kale)
  • blood oranges
  • Cara Cara oranges
  • yellow grapefruit
  • fennel bulb
  • pomegranate seeds
  • toasted pistachios
  • extra virgin olive oil
  • white balsamic vinegar
  • honey
  • sea salt
  • black pepper

To start, wash and dry the mixed greens before placing them in a large salad bowl. Peel the blood oranges, Cara Cara oranges, and grapefruit, removing the white pith, then slice them into rounds.
