Today, I’m excited to share a vibrant and refreshing recipe inspired by the colorful and lively works of abstract expressionist artists. This Citrus Burst Salad is a delightful blend of flavors and textures that will awaken your taste buds and brighten your day.

Ingredients:

  • mixed greens (arugula, spinach, kale)
  • blood oranges
  • Cara Cara oranges
  • yellow grapefruit
  • fennel bulb
  • pomegranate seeds
  • toasted pistachios
  • extra virgin olive oil
  • white balsamic vinegar
  • honey
  • sea salt
  • black pepper

To start, wash and dry the mixed greens before placing them in a large salad bowl. Peel the blood oranges, Cara Cara oranges, and grapefruit, removing the white pith, then slice them into rounds. Thinly slice the fennel bulb and add it to the bowl along with the citrus slices. Sprinkle the pomegranate seeds and toasted pistachios over the top.
