Savory Mexican Stuffed Bell Peppers: A Flavorful Dinner Delight

Today, I’m sharing a fun and flavorful recipe for Mexican-inspired stuffed bell peppers. This dish is perfect for a casual dinner with friends or family. The combination of savory beef, beans, rice, and a variety of spices makes for a filling and satisfying meal that’s sure to please everyone at the table.

To start, preheat your oven to 375°F. Cut the tops off the bell peppers and remove the seeds and membranes from the insides. In a skillet over medium heat, cook the ground beef until browned, then add the black beans, cooked rice, salsa, cumin, chili powder, salt, and pepper. Cook everything together for a few minutes until heated through.

Stuff each bell pepper with the beef and rice mixture, then place them in a baking dish. Cover the dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender. Remove the foil, sprinkle the cheddar cheese over the tops of the peppers, and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Once the peppers are done, remove them from the oven and let them cool slightly before serving. The combination of the tender bell pepper, flavorful beef and rice filling, and gooey melted cheese make for a delicious and satisfying meal.

This recipe makes 4 servings, with each stuffed pepper weighing approximately 300g. Each serving is around 400 calories.

One unique tip for this dish is to drizzle a little extra salsa over the top of the stuffed peppers before serving. This adds a fresh burst of flavor and brightens up the dish.
