Hello, foodies! Today, I’m excited to share my latest culinary creation with you: Copper Blossom Beef Stew. This hearty dish brings together a unique blend of flavors and textures that are perfect for cozy nights or rainy days. I was inspired by the beautiful copper hues of autumn leaves and the delicate blossoms that evoke a feeling of warmth and comfort.

Ingredients:

  • 450g of beef chuck
  • 200g of purple potatoes
  • 150g of sunchokes
  • 100g of chanterelle mushrooms
  • 10g of hyssop
  • 5g of copperwort
  • 30ml of raspberry vinegar
  • 1 cinnamon stick
  • to taste
  • to taste

Preparation:

To begin, I start by cutting the beef chuck into bite-sized cubes and seasoning them with a pinch of salt and black pepper. In a cast iron pot over medium heat, I sear the beef until it is caramelized and set it aside. Next, I add the purple potatoes and sunchokes, both sliced thinly, along with the chanterelle mushrooms. I stir in the hyssop, copperwort, and a cinnamon stick for a hint of warmth.

I deglaze the pot with the raspberry vinegar, scraping up any browned bits on the bottom. Then, I return the beef to the pot and add enough water to cover the ingredients. I bring the stew to a gentle simmer and let it cook slowly for about two hours, allowing the flavors to meld together perfectly.

Tips:

For a unique twist, try adding a handful of fresh raspberries to the stew just before serving. Their juicy sweetness will complement the savory beef and earthy vegetables beautifully.

Serving:

Once the Copper Blossom Beef Stew is fragrant and thickened, I ladle it into bowls and garnish with a sprig of fresh hyssop. This stew serves four hungry souls, with each serving weighing approximately 350g and coming in at an estimated 400 calories.
