That’s why I decided to create this Lemon Lavender Angel Food Cake that combines the bright citrusy flavor of lemon with the subtle floral notes of lavender. It’s a delightful treat that will transport you to a sunny garden with every bite.

For this recipe, you’ll need the following ingredients:

  • 300g egg whites
  • 300g granulated sugar
  • 120g cake flour
  • 1/4 tsp salt
  • 1 tsp cream of tartar
  • 2 tbsp lemon zest
  • 1 tbsp dried culinary lavender

To prepare this delightful cake, you’ll need the following kitchen tools:

  • stand mixer
  • angel food cake pan
  • microplane zester
  • fine mesh strainer

Start by preheating your oven to 325°F (160°C). In a clean, dry mixing bowl of a stand mixer, whip the egg whites on medium speed until they start to foam. Gradually add in the granulated sugar, continuing to whip until stiff peaks form. This should take about 8-10 minutes.

In a separate bowl, sift together the cake flour and salt. Gently fold this mixture into the whipped egg whites, being careful not to deflate the batter. Once fully combined, fold in the cream of tartar, lemon zest, and dried culinary lavender.

Transfer the batter to an ungreased angel food cake pan and smooth the top with a spatula. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the cake springs back when gently pressed.

Once baked, remove the cake from the oven and invert the pan onto a cooling rack. Allow the cake to cool completely before removing it from the pan.
