I wanted to recreate that experience in my own kitchen and share it with all of you.

For this recipe, I have combined some unexpected ingredients to create a dish that is both comforting and adventurous. The flavors are bold and unexpected, and I am confident that you will love it as much as I do.

To start, gather all the following ingredients:

  • dragon fruit, diced (200g)
  • coconut milk (400ml)
  • lemongrass stalks, crushed (2)
  • chili peppers, sliced (2)
  • shrimp, peeled and deveined (250g)
  • lemongrass leaves (for garnish)

Next, make sure you have the following kitchen tools ready:

  • chef’s knife
  • cutting board
  • saucepan
  • wooden spoon

In a saucepan over medium heat, combine the coconut milk, lemongrass stalks, and chili peppers. Let the mixture simmer for 10 minutes to allow the flavors to meld together. Then, add the diced dragon fruit and shrimp to the pan and cook for another 5-7 minutes, or until the shrimp is cooked through.

Once the shrimp is pink and opaque, remove the pan from the heat and discard the lemongrass stalks. Serve the dish hot, garnished with fresh lemongrass leaves for a burst of citrusy aroma.

This exotic dish weighs approximately 850g in total and serves 4 people, with each serving weighing around 213g. Each serving is estimated to be around 250 calories.

One unique tip for this recipe is to add a splash of lime juice right before serving. The acidity of the lime cuts through the richness of the coconut milk and enhances the flavors of the dish.
