Today’s Fall Comfort Food Recipe: Roasted Butternut Squash Pasta

Hello, lovely readers! Today, I’m excited to share a delicious and comforting recipe that’s perfect for the fall season. As the weather starts to cool down, there’s nothing better than cozying up with a warm bowl of pasta that’s both creamy and full of flavor. This Roasted Butternut Squash Pasta is a favorite of mine, and I hope it becomes a favorite of yours too.

For this recipe, you’ll need the following ingredients:

  • 1 small butternut squash (about 700g), peeled and cubed
  • 300g pasta of your choice
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 500ml vegetable broth
  • 200ml coconut milk
  • 1/2 teaspoon nutmeg
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

To make this Roasted Butternut Squash Pasta, you’ll need the following kitchen tools:

  • baking sheet
  • large pot
  • blender
  • knife
  • wooden spoon

Start by preheating your oven to 200°C. Place the butternut squash cubes on a baking sheet, drizzle with olive oil, sprinkle with salt and pepper, and roast in the oven for about 30 minutes until they are tender and slightly caramelized.

In the meantime, cook the pasta according to the package instructions in a large pot of salted boiling water. Drain and set aside.

In a large pot, heat some olive oil over medium heat. Add the chopped onion and garlic, and sauté until they are soft and fragrant. Add the roasted butternut squash cubes, vegetable broth, coconut milk, nutmeg, salt, and pepper. Stir everything together and let it simmer for about 10 minutes.

Using a blender, carefully blend the mixture until smooth and creamy. Taste and adjust the seasoning if needed.

Add the cooked pasta to the pot with the butternut squash sauce, and toss everything together until the pasta is well coated. Serve hot, garnished with a sprinkle of nutmeg or fresh herbs if desired.

This Roasted Butternut Squash Pasta recipe yields approximately 4 servings, with each serving weighing around 400g. One serving is approximately 350 calories.

One unique tip for this recipe is to add a dash of cinnamon to the butternut squash sauce for a warm and cozy flavor twist that will truly elevate the dish.

I hope you enjoy making and indulging in this Roasted Butternut Squash Pasta as much as I do. Feel free to get creative with the ingredients and make it your own by adding your favorite toppings or spices. Happy cooking!
