Ingredients

  • purple cauliflower (200g)
  • persimmon (1, diced)
  • black sesame seeds (15g)
  • rosewater (10ml)
  • arborio rice (150g)
  • saffron threads (pinch)
  • coconut milk (400ml)
  • vegetable broth (750ml)
  • garlic (2 cloves, minced)
  • ginger (1-inch piece, grated)

Preparation

To start, chop the purple cauliflower into florets and dice the persimmon. In a saucepan, heat a splash of vegetable broth over medium heat and toast the black sesame seeds until fragrant. Set them aside for garnish later.

Add the minced garlic and grated ginger to the saucepan and cook until fragrant. Then add the arborio rice and toast for a minute before adding the saffron threads, coconut milk, and vegetable broth. Stir well and bring to a simmer.
