Today’s Special: Roasted Butternut Squash Salad

Hi there! Today, I’m excited to share one of my favorite healthy salad recipes that’s perfect for a light lunch or a refreshing side dish. This roasted butternut squash salad is a delightful blend of flavors and textures that will surely satisfy your tastebuds.

Ingredients:

  • butternut squash (500g, diced)
  • quinoa (100g, cooked)
  • kale (100g, chopped)
  • dried cranberries (50g)
  • pumpkin seeds (50g, toasted)
  • feta cheese (100g, crumbled)
  • olive oil (2 tbsp)
  • balsamic vinegar (1 tbsp)
  • salt and pepper (to taste)

Kitchen Tools:

  • baking sheet
  • mixing bowl
  • knife
  • saute pan

To start, preheat your oven to 400°F (200°C). Place the diced butternut squash on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast for about 25-30 minutes until tender and slightly caramelized.

While the butternut squash is roasting, cook the quinoa according to package instructions. In a saute pan, saute the chopped kale until wilted. In a mixing bowl, combine the cooked quinoa, sauteed kale, roasted butternut squash, dried cranberries, and toasted pumpkin seeds. Toss everything together gently.

Drizzle the salad with balsamic vinegar and additional olive oil if desired. Add in the crumbled feta cheese and give it a final toss to combine all the flavors. Taste and adjust seasoning with salt and pepper as needed.

This roasted butternut squash salad is best served slightly warm or at room temperature. It’s a delicious and nutritious dish that’s packed with fiber, vitamins, and minerals. The combination of sweet butternut squash, tangy feta cheese, and crunchy pumpkin seeds is simply irresistible!
