I’m excited to share a new recipe with you today that combines the smoky flavors of chipotle with the sweetness of roasted sweet potatoes in a delicious taco filling. This dish is perfect for a casual weeknight meal with a twist or a fun gathering with friends. Let’s jump into how to create these flavorful tacos!

Ingredients:

  • 2 medium sweet potatoes, diced
  • 1 small red onion, sliced
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 can black beans, drained and rinsed
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 8 small tortillas
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • Fresh cilantro, for garnish

Start by preheating your oven to 400°F (200°C). Toss the diced sweet potatoes and sliced red onion with olive oil, cumin, paprika, salt, and the chopped chipotle peppers in a mixing bowl. Spread the mixture out on a baking sheet and roast in the oven for 25-30 minutes, or until the sweet potatoes are tender and slightly crispy.

While the sweet potatoes are roasting, heat a skillet over medium heat. Add the drained and rinsed black beans to the skillet and season with a bit of salt and pepper. Cook for 5-7 minutes, then set aside.

Warm the tortillas in a dry skillet or in the oven for a few minutes until they are pliable. To assemble the tacos, fill each tortilla with a spoonful of the black beans, roasted sweet potato mixture, and sliced avocado. Squeeze a bit of fresh lime juice over the top and garnish with fresh cilantro.

The total weight of the cooked dish is approximately 1200 grams, with 8 servings. Each serving weighs around 150 grams, with an estimated calorie count of 250 per serving.
