Hello, foodie friends! Today, I’m sharing a delicious and unique recipe for Mexican-inspired stuffed peppers. This dish is perfect for a cozy night in or a festive gathering with friends. The combination of flavors and textures in these peppers is sure to impress your taste buds!

To make these mouthwatering stuffed peppers, you will need the following ingredients (approximate weights provided):

  • 4 large bell peppers (assorted colors)
  • 250g ground chicken
  • 1 can black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1 cup corn kernels
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese

You will also need the following kitchen tools:

  • chef’s knife
  • cutting board
  • skillet
  • mixing bowl
  • baking dish

Start by preheating your oven to 375°F (190°C) and preparing the bell peppers. Slice off the tops of the peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.

In a skillet over medium heat, cook the ground chicken until it is no longer pink. Add the black beans, quinoa, corn, tomatoes, cilantro, chili powder, cumin, salt, and pepper. Stir everything together until well combined.

Spoon the chicken mixture into the prepared bell peppers, filling them to the top. Sprinkle the shredded cheddar cheese over the top of each pepper.

Bake the stuffed peppers in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.

Once the stuffed peppers are cooked to perfection, remove them from the oven and let them cool slightly before serving.

This recipe makes 4 servings, with each stuffed pepper weighing approximately 300g. One serving of these Mexican-inspired stuffed peppers is around 400 calories.

One unique tip for this recipe is to sprinkle some crushed tortilla chips on top of the cheese before baking for an added crunch and flavor.
