Ingredients:

  • Arborio rice (300g)
  • Butternut squash, diced (500g)
  • Onion, finely chopped (1)
  • Garlic, minced (2 cloves)
  • Curry powder (2 tsp)
  • Vegetable broth (1L)
  • Coconut milk (200ml)
  • Butter (50g)
  • Parmesan cheese, grated (100g)
  • Salt and pepper to taste
