For this recipe, you will need the following ingredients:

  • Arborio rice (300g)
  • Pumpkin, diced (400g)
  • Vegetable broth (1L)
  • Onion, finely chopped (1)
  • Garlic cloves, minced (2)
  • Ground cinnamon (1 tsp)
  • Ground nutmeg (1/2 tsp)
  • Butter (50g)
  • Parmesan cheese, grated (50g)
  • Salt and pepper, to taste

To prepare this dish, you will need the following kitchen tools:

  • Saucepan
  • Wooden spoon
  • Chef’s knife
  • Cutting board
  • Grater

Start by heating the vegetable broth in a saucepan over low heat, keeping it warm throughout the cooking process. In another large saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until soft and fragrant.

Next, add the Arborio rice to the saucepan and toast it slightly, stirring constantly to coat the rice in the butter. Slowly begin adding the warm vegetable broth, one ladle at a time, stirring continuously until the liquid is absorbed before adding more.

As the risotto cooks, sprinkle in the ground cinnamon and nutmeg, enhancing the aromatic flavors of the dish. Stir in the diced pumpkin, allowing it to cook and soften with the rice. Continue adding the broth gradually until the rice is creamy and cooked to al dente.

To finish the risotto, stir in the grated Parmesan cheese until melted and combined. Season with salt and pepper to taste, adjusting the spices if necessary. Remove from heat and let it rest for a few minutes to allow the flavors to meld together.
