Coconut Mango Tango Tart

Today, I’m excited to share a recipe that transports me to a tropical paradise with every bite. This Coconut Mango Tango Tart is a refreshing and exotic dessert perfect for summer gatherings or whenever you need a touch of sunshine in your life.

Ingredients:

  • 400ml coconut milk
  • 2 ripe mangoes
  • 150g almond flour
  • 100g honey
  • 50g coconut oil
  • 1 tsp vanilla extract
  • a pinch of salt

Kitchen Tools:

  • food processor
  • tart pan
  • mixing bowl
  • spatula

To start, preheat your oven to 180°C. In a food processor, combine almond flour, honey, coconut oil, vanilla extract, and a pinch of salt. Pulse until the mixture resembles coarse crumbs. Press the almond mixture into a tart pan, covering the bottom and sides evenly. Bake the crust for 10 minutes until lightly golden brown, then set aside to cool.

While the crust is cooling, prepare the filling. In the same food processor (no need to clean it), blend ripe mangoes until smooth. Add coconut milk and blend until well combined. Pour the mango coconut mixture into the cooled tart crust and spread it out evenly.

Bake the tart in the oven for 25-30 minutes, or until the filling is set. Remove from the oven and let it cool to room temperature before refrigerating for at least 2 hours to set completely.

Once chilled, slice the Coconut Mango Tango Tart into wedges and serve. The creamy coconut mango filling with the nutty almond crust is a delightful combination of flavors and textures that will transport you to a tropical paradise with every bite.

This recipe makes approximately 8 servings, with each slice weighing around 150g. One serving of this Coconut Mango Tango Tart is estimated to be around 250 calories.

For an extra touch of tropical paradise, try garnishing the tart with fresh mint leaves or a sprinkle of toasted coconut flakes before serving. Enjoy this exotic dessert with loved ones or savor it as a special treat just for yourself.

I hope you give this Coconut Mango Tango Tart a try and experiment with different fruit fillings or nut crusts to make it your own. Let me know how it turns out and how you put your own twist on this delicious recipe!
