Fall Comfort Food: Cheesy Bacon Stuffed Butternut Squash

Hello, foodies! Today, I’m excited to share with you a delicious and comforting recipe that I love to make during the fall season. This Cheesy Bacon Stuffed Butternut Squash is the perfect blend of savory and sweet flavors that will warm you up on a chilly autumn evening.

For this recipe, I like to use a large butternut squash that’s ripe and slightly sweet, paired with crispy bacon and gooey melted cheese for the ultimate comfort food experience. The combination of flavors and textures in this dish is truly irresistible, making it a favorite in my household.

To begin, preheat your oven to 375°F (190°C) and gather the following ingredients:

  • 1 large butternut squash
  • 8 slices of bacon
  • 1 cup of shredded cheddar cheese
  • 1/4 cup of chopped fresh parsley
  • Salt and pepper to taste

Grab the following kitchen tools to help you prepare this delicious dish:

  • chef’s knife
  • cutting board
  • spoon
  • baking sheet

Start by cutting the butternut squash in half lengthwise and removing the seeds. Place the squash halves on a baking sheet and sprinkle them with salt and pepper. Roast the squash in the oven for about 45 minutes, until they are fork-tender.

While the squash is roasting, cook the bacon in a skillet until it’s nice and crispy. Once cooked, crumble the bacon into small pieces and set it aside.

Once the squash is done roasting, remove them from the oven and carefully scoop out the flesh, leaving about a 1-inch border around the edges. Place the squash flesh in a bowl and mix it with the bacon, shredded cheddar cheese, and chopped parsley.

Stuff the squash halves with the filling mixture and return them to the oven for another 10 minutes, or until the cheese is melted and bubbly.

Once the squash is done baking, remove them from the oven and let them cool slightly before serving. Cut the stuffed squash into slices and enjoy the gooey, cheesy, bacon-filled goodness!

This Cheesy Bacon Stuffed Butternut Squash weighs approximately 2 kg in total and serves 4 people. Each serving is around 500 grams and has an estimated calorie count of 450 calories.

One tip to make this dish even more delicious is to sprinkle some smoked paprika on top of the stuffed squash before serving. This will add a smoky flavor that pairs perfectly with the bacon and cheese.

I hope you give this recipe a try and enjoy it as much as I do! Feel free to experiment with different cheeses, herbs, or toppings to make it your own. Happy cooking!
