Cool Down with This Refreshing Cucumber-Mint Sorbet Recipe

Today’s Unique Creation: Cucumber-Mint Sorbet

As the summer sun beats down, I find myself craving something light, refreshing, and a little bit unexpected. That’s why I’m excited to share my latest creation with you today: a Cucumber-Mint Sorbet. This unique dessert is a perfect balance of sweet and tangy, with a subtle hint of freshness from the mint. It’s the ideal treat to cool you down on a hot summer day.

To make this Cucumber-Mint Sorbet, you’ll need the following ingredients:

  • 2 medium cucumbers, peeled and seeded (about 400g)
  • 1/2 cup fresh mint leaves, packed (about 20g)
  • 1/2 cup sugar (100g)
  • 1/4 cup fresh lemon juice (about 60ml)
  • 1/2 cup water (120ml)

Gather the following kitchen tools before you begin:

  • blender
  • fine mesh sieve
  • medium saucepan
  • mixing bowl
  • ice cream maker

Start by pureeing the cucumbers in a blender until smooth. Strain the mixture through a fine mesh sieve, pressing down to extract as much liquid as possible. Discard any solids. In a saucepan, combine the cucumber juice, sugar, and water. Heat over medium heat, stirring until the sugar has dissolved. Remove from heat and let it cool to room temperature.

Once the cucumber mixture has cooled, stir in the fresh mint leaves and lemon juice. Transfer the mixture to a mixing bowl and refrigerate for at least 2 hours, allowing the flavors to meld together.

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a sorbet-like consistency. Transfer the sorbet to a container and freeze for an additional 2 hours to firm up.

This Cucumber-Mint Sorbet weighs approximately 600g once cooked. It serves about 4 people, with each serving weighing around 150g. Each serving is estimated to be around 150 calories.

A clever tip for this recipe is to serve the sorbet in hollowed-out cucumber cups for an extra touch of elegance and a fun presentation. Simply cut the ends off of a cucumber, hollow out the center with a spoon, and fill with scoops of sorbet before serving.
