Ingredients:

  • 3 large bell peppers, halved and seeds removed
  • 1 cup quinoa, cooked
  • 1 lemon, zested and juiced
  • 1/4 cup fresh herbs (such as parsley, mint, and dill), chopped
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

To start, preheat your oven to 375°F (190°C) and prepare the bell peppers by halving them and removing the seeds. Place them in a baking dish, ready to be filled.

In a mixing bowl, combine the cooked quinoa, lemon zest, lemon juice, chopped herbs, feta cheese, olive oil, salt, and pepper. Mix everything together until well combined and the quinoa is coated in the lemony herb mixture.

Spoon the quinoa mixture into each bell pepper half, pressing down gently to pack in as much filling as possible. Drizzle a little extra olive oil on top for added richness and flavor.

Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the filling is heated through. Remove the foil for the last 10 minutes of baking to let the tops of the peppers get slightly crispy and golden.

Once out of the oven, let the stuffed peppers cool for a few minutes before serving. The aroma of the lemon herb quinoa will be irresistible, and the bright colors of the peppers will make for a stunning presentation.

This recipe makes 6 stuffed pepper halves, with each serving weighing approximately 200 grams. One serving is around 250 calories, making it a light and healthy dish that’s full of flavor.
