Fiery Flavors: Spicy Sweet Potato Tacos to Spice Up Your Week

Today’s Special: Spicy Sweet Potato Tacos

As the weather starts to cool down and the leaves begin to change color, I find myself craving warm and comforting meals. That’s why I’m excited to share my latest creation with you today: Spicy Sweet Potato Tacos. This dish combines the earthy sweetness of roasted sweet potatoes with a kick of spicy heat, all wrapped up in a warm tortilla. It’s the perfect way to add some excitement to your weeknight dinner routine.

Ingredients:

  • 2 medium sweet potatoes, diced
  • 1 small red onion, thinly sliced
  • 1 bell pepper, diced
  • 1 can (400g) black beans, drained and rinsed
  • 2 tablespoons taco seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 small corn or flour tortillas
  • 1 avocado, sliced
  • Fresh cilantro, for garnish

To start, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a mixing bowl, toss the diced sweet potatoes, red onion, bell pepper, black beans, taco seasoning, olive oil, salt, and pepper until everything is well coated. Spread the mixture out on the prepared baking sheet and roast in the oven for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized.

While the vegetables are roasting, heat a skillet over medium heat. Warm the tortillas in the skillet for about 30 seconds on each side until they are soft and pliable. Keep the tortillas warm by wrapping them in a clean kitchen towel.

Once the vegetables are done roasting, assemble your tacos by filling each tortilla with a generous scoop of the sweet potato mixture. Top with sliced avocado and fresh cilantro. Serve hot and enjoy the delicious combination of flavors and textures!
