Today’s Unique Healthy Snack Recipe: Roasted Chickpea and Pineapple Salad

I’m excited to share a new and unexpected combination for a healthy snack today. This roasted chickpea and pineapple salad is a refreshing and savory treat that’s perfect for a warm summer day. The mix of crispy chickpeas, juicy pineapple, and tangy dressing creates a burst of flavors that will surprise and delight your taste buds.

Ingredients:

  • 400g canned chickpeas (drained and rinsed)
  • 300g fresh pineapple (diced)
  • 50g red onion (thinly sliced)
  • 100g baby spinach
  • 30ml olive oil
  • 15ml balsamic vinegar
  • Salt and pepper to taste

Kitchen Tools:

  • baking sheet
  • mixing bowl
  • knife
  • cutting board

To start, preheat your oven to 200°C. Spread the drained and rinsed chickpeas on a baking sheet and drizzle with olive oil. Season with salt and pepper, then roast in the oven for 20-25 minutes until crispy.

While the chickpeas are roasting, dice the fresh pineapple and thinly slice the red onion. In a mixing bowl, combine the pineapple, red onion, and baby spinach.

In a small bowl, whisk together the balsamic vinegar and remaining olive oil to create the dressing. Once the chickpeas are crispy, add them to the mixing bowl with the pineapple, onion, and spinach. Drizzle the dressing over the salad and toss gently to combine.

Serve the roasted chickpea and pineapple salad in individual bowls and enjoy the refreshing and satisfying flavors.

The approximate total weight of the cooked dish is 800g, with 4 servings at around 200g each. One serving of this delicious salad is approximately 250 calories.
